The topic of health for the Christian is a broad topic. It overlaps with science, but science is often impersonal. Health, on the other hand, is very personal.
One aspect of health which was prominent in the past, but is being lost in modern health education, is the non-physical aspects of health. Sure, we learn about the human body, about diseases, about brushing teeth, personal safety, and so on. These are all physical aspects of health.
The delight of Christian textbooks on health is the inclusion of family health, community and church health, spiritual health, manners, masculinity and femininity, Godly morality, and other topics. It is failures in these areas that are wrecking the health, including physical health, of many people in western societies. Individual families have the opportunity to stem this decline at home.
When evaluating health textbooks, many are going to look good. Remember to evaluate the curriculum with regards to the topics listed in the preceding paragraph as well.

Be not wise in thine own eyes: fear the LORD, and depart from evil. It shall be health to thy naval, and marrow to thy bones. - Proverbs 3:7-8
